Low Fat Carrot Muffins

De fiecare data cand gasesc la supermarket morcovi dulci ,primul gand ma duce la un dulce cu morcov,apoi la o salata.
1 cup = 1 cana de 200 ml

Ingrediente:
1 1/2 cup faina
1 lingurita bicarbonat de sodiu
1 lingurita praf de copt
1 1/2 lingurita scortisoara
1/4 lingurita nucsoara
 1/4 lingurita ghimbir pudra
1/2 -3/4 cup zahar brun
1 ou,batut
3 linguri ulei
1 plic zahar vanilat
1/2 cup lapte
1 cutie de ananas,bucati,fara suc
1 1/2 cup morcovi,dati pe razatoare
1/2 cup stafide (optional)
1/2 cup nuci (optional)

Intr-un bol se adauga faina,bicarbonatul de sodiu,praful de copt,condimentele si zaharul.
In alt bol se amesteca oul,laptele,uleiul si zaharul vanilat.
Intr-un al treilea bol mai adanc se adauga morcovii si ananasul. Se pune peste amestecul de lapte,ou si ulei.Se amesteca bine.
Se adauga bolul de faina si se amesteca usor,numai cat sa fie combinat.
Acum se pot incorpora nucile si stafidele,daca ai ales sa folosesti.
Se coc in cuptorul preincalzit,in forma de briose ,cam 20-25 de minute.

Ingredients:
1 1/2 cups flour
1 tsp. baking soda
1 tsp. baking powder
1 1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. ginger
1/2-3/4 cup brown sugar,
1 egg, slightly beaten
3 Tbsp. oil
2 tsp. vanilla
1/2 cup non-fat or low-fat milk
1 (8 ounce) can crushed pineapple, well drained
1 1/2 cups grated carrots
1/2 cup raisins (optional)
1/2 cup walnuts (optional)


Preheat oven to 350° F. Line 12 muffin tins with paper liners or spray tins with non-stick cooking spray.
In a large bowl mix together the flour, baking soda, baking powder, spices and brown sugar.
In a small bowl whisk together the egg, oil, milk and vanilla.
In a medium bowl mix the shredded carrots with the crushed pineapple.
Add in the egg mixture into the carrot/pineapple mixture; mix well to combine, then add to the dry ingredients; mix just until combined.
Don't overmix,or you'll end up with not so soft muffins.
Add in the raisins and chopped nuts.
Divide the mixture between the 12 muffin tins.
Bake for about 20-25 minutes or until the toothpick comes out clean.
