Corn Fritters

For English version scroll down

1 cup = 1 cana 200 ml

Ingrediente:
2 cup porumb (am folosit congelat)
1/4 cup ceapa verde
2 oua
1 catel de usturoi
1/2 cup faina
1/4 cup coriandru proaspat,tocat marunt
sare
piper negru,proaspat macinat
ulei ptr prajit

This one looks like a Tex-Mex version of corn fritters to me. Since the littles can't have spicy (yet, though garlic is highly enjoyed) I ate mine with Mucho Mas Habaneros on top of it.

Ingredients:
2 cups corn
1/4 cup diced green onion
1/4 cup diced green bell pepper
1-2 tablespoons seeded, diced jalapeno ( I had to leave it out for my littles)
1/4 cup chopped cilantro
2 beaten eggs
1 garlic,minced
1/2 cup flour
freshly grounded black pepper
pinch salt
oil for frying or baking

Mix all ingredients and don't add more then 1/2 cup flour, the texture will change.
I left out the jalapeno, but it would have been a great addition.
Don't overmix, just enough to be incorporated.
I baked mine, but you can fry them as well in a non stick pan.
